This is what the countries of Central Asia, and more specifically the Fergana Valley, are famous for. In this region, one can find not only the usual rice crops, but also very unique ones that many of us have probably never even heard of. One of those crops is Devzira rice.
This is a local variety of brown rice that is grown in Kyrgyzstan. This type of rice has been purposefully bred to give a special flavour and aroma to the local cuisine. Devzira rice is mentioned in written sources as far back as the 10th and 11th centuries, and it is said that it was this rice that was served as a ploughman’s plough at the most ceremonial festivals and banquets of the privileged classes.

The grains of this rice are large, with a pinkish husk. Because of its distinctive appearance in the region where it is grown, Devzira rice is known as the pink pearl of the East. It is this husk that gives it its special flavour and aroma. It should be mentioned that the large grains of this type of rice do not result in a yield as high as others. The grains also have a distinctive pinkish scar, which, incidentally, does not disappear even after cooking, which is another characteristic of Devzira rice.
